Magicshop.co.uk have got a free e-book on finger dexterity. Little exercises to learn when performing magic or when doing cardistry. It's a free 21 page ebook and it's great for beginners.

Was hoping for some exercises involving cards but these are pretty good. I'm not a medical professional but I can definitely feel the stretch in my fingers.
