Are you sure you arent wrong? If you look at the pics there, the back design is a one way back which would mean that it is not the T11 version.
What you were seeing was the back of the box - not the back of the cards. As confirmed by Simonart, the JAQK Cellars deck on sale there now is the T11 version they "sold out" of some time ago. They either released a healthy quantity to the winery when they were first made, or they're making additional print runs just as they did for the Black Stingers, Propagandas and who knows how many other decks. I think the Sentinels are the first time they ever reprinted a deck, just reprinted, and not only didn't call it "version 2" with a fancier box, but actually sold the subsequent printing on their own web site. They never sold Erlanger-made Propagandas, yet they popped up in shops all over the Internet a few months ago...those decks didn't come from Keebler elves, Lucky the leprechaun or Fulton's Barber Shop - they came from Theory11, but never ended up on the website's inventory, instead being sold direct to resellers.
You are able to get them at JAQK Cellars winnery, but I think you have to order some wine to get them. At least, you can see the chip on the $75 bottle. I'm not very dissapointed they didn't sold it, and I didn't expect them too either. I think T11 still tries to sell products that refer to magic in some way. Card-related stuff and Tricks. I don't really see them beginning a business with hand lotions or chips...
Actually, there's a branch of magic related to coin magic that deals exclusively with casino-style poker chips. There's all kinds of gaffed chips, much the same as the gaffed coins that exist for coin magic - magnetic, shells, etc. So having chips for sale wouldn't exactly be beyond the purview of a magic shop.
